Authentic Food World Association participates in
a series of projects dedicated to authentic, genuine and natural
foods. After the launch of the seminar, where we talk about the
traditions of authentic Italian dairy production and give
examples of how this experience can be applied in practice in
any country in the world, our ideas were heard and quickly
picked up on.

We are proud to present the results of our efforts in promoting
authenticity around the world.
In June 2023, a research project started in Russia to create the
first zone of authenticity, a project idea born from the fact that
Natalia Panova participated in our seminar dedicated to "Authentic
Cheese".
It is especially significant that the project originated in the
Konakovo district of the Tver region, exactly where the history of
Russian dairy production originates, the founder of which is
rightfully considered N.V. Vereshchagin.
With the assistance of the National Scientific Research Institute
of Reclaimed Lands of Russia and under the leadership of Andrey
Dmitrievich Kapsamun, with the participation of the renowned
animal husbandry Barbosova Maria Evgenievna, on the basis of the
personal subsidiary farm "Senturino", our seminarian graduate
Natalia Vasilievna Panova and her animals are at the origins of
the production of the first authentic cheeses in Russia
The complete cycle, from the base of the feed, to feeding the
animal through the creation of lactograft with authentic local
microflora, up to the final product - the cheese - is all included
in this ambitious project.
We are delighted to be part of such an important and significant
cause, we support this initiative in every possible way, we are
always ready to provide the necessary consultative support.
We hope that this initiative will spread to other regions, not
only in Russia, but in other countries, we will be able to make
our modest contribution to such a landmark for future generations
as the preservation of the richness of the earth, traditions and
create a desire to create the new, through knowledge of the past.
We are open to cooperation with other farms and also invite you to
our workshop "Authentic Cheesemaking", the creator of which is the
author of many books on authentic Italian cheesemaking, a
cheesemaker and author of training courses - Losenkova Julia. The
seminar, in Russian language, is available online for both
individuals and companies.
"Whey
Recovery" Project
Authentic Food World, in
order to preserve and encourage the use of natural, genuine
and authentic products for the new generations, and thanks
to its dairy experience, has developed and is still
developing new recipes with milk derivatives, such as the
"jam and caramel of whey".
Therefore described in a special project, they have been
taken up and included in its line of products by Azaly
Khaikin of "Granfather Azaly" (email: azaly1956@gmail.com),
a creator of natural and wholesome foods, including dairy
products, which has its own laboratory in Israel and which,
also thanks to our advice and specific publications
